Sometimes, the best treasures can be found tucked away in a place you may least expect it. And that is true for what you can find at Ox’s Smoked Meats in Westphalia.
“It’s all about the flavor,” said Cliff Hengesbach, owner of Ox’s Smoked Meats.
Ox’s has a variety of smoked meats, and other products at its convenience store. To smoke their meats, Hengesbach explained they are currently using hickory, and offer three different kinds of bologna, 18 different kinds of brats, a dozen different types of jerky, cheeses and smoked meats.
“We try to have a large variety,” said Hengesbach. “People can let us know a head of time to what they want, and if we don’t have it, we can try to make it for them.”
Also, if you have enough venison, they will also turn it into your favorite specialty.
Hengesbach always loved to cook meat growing up, and met some people who smoked their meats and his hobby evolved from there.
“I thought of this as a retirement thing…but once we got it up and running we got a lot busier than we thought,” Hengesbach said. “As far as a retirement, it’s a seven days a week thing.
“It’s something I like to do, and it is a great opportunity to make what I enjoy.”
Hengesbach said he always tries to have a large variety of snacks and smoked meats. To make his smoked meats perfect, he says he likes to let the meat hang for at least a day before smoking it.
“Its about adding a little bit of flavor to it,” Hengesbach said.
