Your guide to using 3 popular alternative flours

Buckwheat, almond and coconut are three of the trending flours for the gluten-free people and folks who just want to eat better. Which flour is right for your diet?  Lindsey Granger and Crêpe Bar’s Jeff Kraus have your complete guide to healthy alternative flours.

1.  Buckwheat Flour

This is one of Jeff’s favorites and it comes from a fruit seed. The flavor itself is unique, it's very earthy, a little sweet and there’s nuttiness to it. It’s tasty with lots of protein, fiber and low sugar. At $3 a pound is pretty easy to swallow.

2.  Almond Flour

This is of course made from ground almonds and is also giving old school flours some real competition. It’s high in protein count, low in fiber and very low in carbs. It offers big benefits, but it will cost you about $9 a pound.

3.  Coconut Flour

This flour is the newest and most popular alternative. It’s made from the pulp of the coconut and they dry it out to make the flour. At $4 a pound it's high in fiber, low in sugar, gluten-free and makes a mean mini churro dessert.
