Cauliflower rice if officially the new "it" food and it's being used to replace rice for a healthier diet. Lindsey granger met up with author of The Superfood Swap and Chicago Cubs nutritionist, Dawn Jackson Blatner, to find out everything we need to know about the new cauliflower rice craze.
1. Why Is It So Popular?
It's 10 times fewer calories than white rice and 3 times more fiber than regular white rice. It also gives you about 50 percent of your vitamin C for the day. It's super nutritious and very low in calories so everybody is on this cauliflower rice bandwagon now and that’s a good thing.
2. Where Do You Get It?
Dawn’s referred method of cauliflower rice is to buy it already made in the frozen section and fresh produce section. You can usually get cauliflower diced up to already look like rice. There are also two easy ways you can make this at home yourself. For one all you need is a cheese grater. For the other a food processor.
3. What Can You Make With It?
You can put it in a burrito bowl by putting the cauliflower rice in a skillet and heat it up. That becomes the base of your burrito bowl instead of rice. If that doesn't interest you, try fried rice or even cheddar grits. Dawn says it cooks quickly or it will get mushy.
