Lousiana Creole Gumbo shares recipe for super jumbo gumbo

Mardi Gras is the final festival before the season of Lent. Which makes it the perfect time for people to celebrate with the foods they love before giving these things up for the Lent holiday.

The folks at Lousiana Creole Gumbo in Detroit are sharing their recipe for their Super Jumbo Gumbo. It's posted below. The restaurant is also hosting a Mardi Gras celebration on Saturday, February 22, at both of its locations. Tickets are $25 and can be purchased online.

Super Jumbo Gumbo

  • 2 pounds chicken

. 1/2 pound okra

  • 3/4 cup unsalted butter
  • 1/2 cup all-purpose flour
  • 1 cups yellow onion, diced
  • 1 cups mixed bell peppers (yellow, red and green)
  • 1/2 cup celery, diced
  • 2 cloves garlic, minced
  • 2 cups diced tomato
  • 12 ounces sausage
  • 4 cups chicken broth
  • 4 oz creole seasoning

In heavy bottom cast iron skillet, melt 1/4 cup butter over medium heat. Add all veggies, except garlic and sautee until tender. remove from heat. Add chicken to pan and season with 2 oz seasoning cooking until no longer pink. remove from heat. add sausage and cook until fragrant. remove from heat and drain. measure fat remaining in the bottom of the pan. add enough butter to equal 1/2 cup, adding and cooking flour for a few minutes to create a roux. cook constantly for 5-10 minutes, making sure roux does not burn, deglaze the pan with chicken broth whisking until smooth. Add all ingredients back into the skillet and cook on low for 1 hour. Serve over rice. Enjoy!
