Here's what you need:
2 cups warm water
1/2 cup sugar
2 tbs yeast
2 eggs
4 tbs melted butter
1 tsp salt
1 cup evaporated milk
8 cups flour
STEP 1: In a medium mixing bowl whisk together the yeast, sugar and warm water. Let the yeast bloom for 15 minutes (will become bubbly).
STEP 2: Whisk in the two eggs, butter, salt and evaporated milk.
STEP 3: Add the first four cups of flour to the yeast mixture and whisk well.
STEP 4: Add the second four cups of flour and mix (by folding) with a rubber spatula.
STEP 5: Empty the bowl onto your floured work surface and slowly begin kneading the dough into a smooth ball.
STEP 6: Spray a clean medium sized mixing bowl and place your dough ball in; spray the top and tightly wrap with plastic. Let the dough proof for two hours.
STEP 7: Flour your work area and place the proofed dough on it; cut it in half and begin rolling the dough out into a square piece 1/4 of an inch thick. Using your bench scraper cut the beignets into large squares. You should get 24-30 pieces.
