Super Easy Banana and Rolled Oat Cookies

As a new mom in the 21st century, much of my baby prep and parenting knowledge has come not from pouring over books, but Googling the heck out of anything and everything on my phone.

While you can't trust everything you read on the internet - most of it, really - there are some incredibly helpful websites that have been my saviors as a new parent, including BabyCenter and What To Expect

And as a nursing mother, I've done a lot of research on what will help me maintain and enhance my supply as my daughter Stella gets older. Aside from drinking enough water to fill a wading pool and taking supplements like Fenugreek, I stumbled upon something a little more fun: lactation cookies! 

Oats are known for helping a mother's milk supply, so lactation cookies call upon this super ingredient along with things like Brewer's Yeast to help bump up milk production in a yummy way.

I found and made this recipe a couple months ago, and while they were very delicious, I didn't love the fact that they required butter and sugar. I mean come on, I'm a new mom looking to drop pregnancy weight... can't be eating cookies like this even if they do help in other areas. Even with substitutes listed, these seemed like any other oatmeal type of cookie with some modifications to boost milk supply.

I still had a large bag of rolled oats in my pantry, so I went searching for a healthier lactation cookie recently. That's when I found a recipe for cookies that required only two ingredients - TWO - including rolled oats. 

The other ingredient? A banana! 

Instead of promising my husband that I'd be making loaves of banana bread with our blackening bananas, I could make a healthy oat cookie and use the bananas up in the process!

While the recipe requires only two ingredients, it's easy to add anything you want to them - nuts, chocolate chips (my favorite), cinnamon, dried fruits, etc. 

This recipe is super healthy and gluten-free!

To help boost the lactation benefits, I added a couple tablespoons of Brewer's Yeast. (NOTE: By adding Brewer's Yeast, these will no longer be gluten-free.)

Super Easy Banana and Rolled Oat Cookies

Ingredients

  • 3 Cups Rolled Oats (use 1-1 ratio for rolled oats and bananas. If you have 1 banana, use 1 cup rolled oats. If you have 2 bananas, use 2 cups rolled oats, etc.)
  • 3 Bananas 
  • Desired add-ins (chocolate chips, nuts, dried fruit, etc)
  • 2 tablespoons Brewer's Yeast (for lactation cookies)
     

 

 

Directions

  1. Preheat oven to 350 degrees.
  2. Grease cookie sheets or place foil on cookie sheets and spray with non-stick spray.
  3. Unpeel bananas and place in large bowl.
  4. Add rolled oats. Add Brewer's Yeast at this step if making lactation cookies.
  5. Use hands to mash bananas and oats together until mixed well. 
  6. Mix in desired add-ins (I used chopped chocolate chips this time).
  7. Form cookies to preferred size and space out on cookie sheet. 
  8. Bake for 15 minutes in the oven.
  9. ENJOY!
      

  

These are so simple, so quick, and definitely yummy! Whether you're a mommy or someone just looking for a healthy cookie - and a way to use up those darn bananas - these are for you!
