Pesto and Avocado Pasta with Sun-dried Tomatoes

I'm a big fan of avocados, but I admit that my use of them is typically limited to mashing them up for yummy guacamole, slicing them onto a pizza or sandwich, or eating them plain. That was until I saw a Facebook friend mention using avocados on pasta, and it was a revelation!

At the farmers market this past weekend, I bought some of my favorite Michigan-made pasta from The Local Epicurean. I knew its soft texture and garlic-basil flavor would be a perfect base for creating this dish. All I needed was a quick trip to the grocery store for the rest of my ingredients.  


Pesto and Avocado Pasta with Sun-dried Tomatoes



  • Pasta (the wider noodles from The Local Epicurean were great, but a linguine or any favorite type of pasta from the store would also work fine)
  • Two small ripe avocados
  • Pesto
  • Sun-dried tomatoes
  • Olive oil
  • Sliced chicken breast (optional)
  • Pine nuts (optional)


  1. Prepare pasta per directions.
  2. As pasta is cooking in boiling water, cut avocados length-wise and scoop out of the peels into a bowl, removing the pits. Add approximately two spoonfuls of pesto, as desired.
  3. Mash avocados until a creamy consistency, mixed well with pesto. Add about a tablespoon of olive oil to mixture to thin out. 
  4. Slice sun-dried tomatoes into strips. Set aside.
  5. When pasta is done cooking, strain and add back to pan and turn off heat. Scoop avocado-pesto mixture into pan and toss pasta to evenly coat.
  6. Place pasta in dinner bowls, and garnish with sun-dried tomato slices, along with pine nuts and chicken breast strips (I'm a lazy girl and often buy the pre-cooked chicken strips at the store because they are so easy to add to a salad or other dishes on a whim. Cooking chicken will add a couple steps and more time to this dish).
