Tomato Basil Chicken

Ever since my neighbor brought over some yummy cherry tomatoes from his garden, I've been wondering what to make with them.  I didn't have much time this past Sunday, so I needed an easy recipe that I could use what ingredients I had on hand...

Tomato Basil Chicken


1 pound  boneless skinless chicken

1 box fettuccine noodles

Fresh tomatoes (I used cherry tomatoes)

Zucchini (again from my neighbors garden)

3 Garlic Cloves, minced

2 tablespoons EVOO

4 tablespoons cold butter

1/2 cup Fresh basil (from my garden)

Fresh grated Parmesan cheese


Clean and cut chicken into strips.  Season chicken with salt and pepper. Heat up olive oil in pan, make sure it's hot before adding your chicken, otherwise you'll have greasy meat.  While the oil is heating up, get your water going for the pasta.  Add chicken, cooking 3-4 minutes on each side depending on thickness.  Add in your fresh chopped tomatoes, stirring (be careful, there will be lot's of splattering and sputtering).  

Your water should be boiling now.  Add in the fettuccine noodles, and boil for about 10 minutes.

Next, add in your fresh basil chopped into ribbons.  Then, add in the cold butter...this is what will make the sauce silky.  Add in your minced garlic.  Stir.  Your house will seriously smell AH-MAZING!

After your pasta is done cooking, drain and return to pot.  Next, combine your chicken and sauce with the noodles, toss together.  Serve with freshly grated Parmesan cheese and a crusty loaf of bread.  Enjoy!
