I found myself scrounging through the cabinets Friday night for something to make for dinner. My husband was out of town, so I wanted something quick, healthy and yummy! Here's my recipe for a quick, delicious Greek inspired dinner that is full of protein (with no meat), whole grain and vegetables:
Greek Quinoa with Feta
1 Cup Quinoa, prepared
1 Can Green Beans
1 Can Diced Tomatoes with Green Chilies (adds an extra kick!)
Feta, Crumbled
Black Pepper
EVOO
Directions
Prepare Quinoa as directed. In a separate pot, combine green beans and tomatoes, heat on med-low for 10 minutes while Quinoa is cooking. You can substitute regular diced tomatoes without the chilies if you'd like a less spicy version. Once all water is dissolved from Quinoa, spoon into a bowl and top with the green beans and tomatoes. Crumble feta cheese and sprinkle on top. Add black pepper to taste. Drizzle the lightest bit of extra virgin olive oil over top. Enjoy!
