Black Bean & Corn Salad with Cilantro Dressing
I am a HUGE fan of bean salads, not only are they delicous, but they are easy to make and healthy-- full of fiber, low in fat! I found this recipe on pinterest and tweaked it to fit my vegan diet!
Here is what you will need:
1 can of black beans- rinsed
1 can of corn- rinsed
1/2 red onion- diced
1 avocado- chopped
3 tbs. of fresh chopped cilantro
1/4 cup of olive oil
3 tbs. of red wine vinegar
Salt and pepper to taste
Combine first 4 ingredients first and mix together. Then add the olive oil and red wine vinegar. To finish, add the chopped cilantro and then the salt and pepper. Mix well and ENJOY!
I personally think it tastes better cold, so I would suggest letting it sit in the fridge for at least 30 minutes or so until enjoying!

This salad is great alone but can also be served with tortilla chips as a dip at a dinner party! Enjoy it any way you please :)
