Spicy Chicken with Avocado Salsa
Over the weekend, my roommate, Kristen, and I tackled this recipe for Cayenne-Rubbed Chicken with Avocado Salsa.
Kristen is quite the chef, and she ended up making the dish differently, with some fantastic results! I've never been able to follow a recipe to save my life, I just like to throw the contents of my fridge into a pan and call it a day. That's why this chicken dish is so great, you can pretty much add or leave out whatever you want and it's still great!
Before you get started, you can't cook without playing some music! here's a playlist with some of my favorite, more calming remixes of popular songs.
Here's our (mostly Kristen's) variation:
Course salt and ground black pepper
1/2 teaspoon cayenne pepper
1/2 teaspoon chili powder
2 tbs olive oil
1/4 cup diced red onion (this was more than enough for us, add more if you want!)
2 tbs fresh lime juice (We used about 2 limes)
1/4 cup chopped fresh cilantro
2 avocados diced (We love avocados!)
1) In a small bowl, compine 1 tsp salt, 1/4 teaspoon pepper, cayenne and chili powder; rub all over chicken.
2) In a large skillet, heat oil over medium. Add chicken, and cook until browned on the outside and cooked through.
3) While the chicken is cooking, combine onion, lime juice, and cilantro. Just before serving fold in the avocado chunks and season with salt and pepper. Serve salsa over chicken.
So delicious! We served ours with rice for a satisfying dinner.
